Picchi-Pacchi Sauce, A Traditional Sicilian Sauce
This week I am in the mood of talking about food… The picchi-pacchi Sauce is a traditional Sicilian sauce. Do not ask me about the origin of the name which is quite curious! I never really tried it before going to work to the other side of the island in Palermo (I am originally from the Messina province). This sauce consists of four basic ingredients:
tomatoes
basil
anchovies
lots of garlic

I must admit that I am always in the mood to discuss food - and to learn more about the culinary aspects from Sicily only make us want visit the island again.
Wild fennel and Sardines over pasta - one of my favourites but why do all the U.S.-based recipes include tomato paste?
